Prepare the Vinaigrette
In a small bowl, combine the chopped Serrano pepper, minced ginger, olive oil, soy sauce, rice vinegar, and honey. Whisk together until well combined. Set aside.

Cook the Oden Vegetables
In a pot of boiling water, add the oden vegetables. Boil for about 5-7 minutes until tender. Drain and set aside.

Sear the Fish
Heat a non-stick skillet over medium-high heat. Add a tablespoon of olive oil. Season the fish fillets with salt and pepper. Place the fish in the skillet and sear for about 3-4 minutes on each side or until golden brown and cooked through. Remove from the skillet and keep warm.

Blanch the Choi Sum
In the same pot of boiling water used for the oden vegetables, blanch the choi sum for about 2 minutes until bright green. Drain and rinse under cold water to stop the cooking process.

Assemble the Dish
On a serving plate, arrange the blanched choi sum, oden vegetables, and top with the seared fish. Drizzle the sizzling serrano ginger vinaigrette over the dish just before serving.
