Preparation Steps

Prepare Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix in rice vinegar and let it cool.

Prepare Fillings
Slice unagi and sashimi into thin strips. Rinse sea asparagus under cold water and trim the ends.

Assemble the Rolls
Place a bamboo sushi mat on a clean surface. Lay a nori sheet shiny side down. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange unagi, assorted sashimi, and sea asparagus in a line across the middle of the rice.

Roll the Sushi
Using the bamboo mat, roll the nori away from you, pressing gently but firmly. Roll until the border of the nori is reached. Moisten the edge with a little water to seal the roll.

Slice and Serve
Using a sharp knife, slice the roll into bite-sized pieces. Arrange on a plate, drizzle with ponzu sauce, and sprinkle with sesame seeds. Serve with wasabi and pickled ginger on the side.
