    Marinating the Ahi Tuna

    In a bowl, mix together soy sauce, mustard, sesame oil, grated ginger, minced garlic, and black pepper. Place the Ahi tuna steak in the marinade, making sure it is fully coated. Cover and refrigerate for at least 30 minutes.

    Searing the Tuna

    Heat a skillet over high heat. Remove the tuna from the marinade, allowing excess marinade to drip off. Sear the tuna for about 30 seconds on each side for rare, or longer if desired. Remove from heat and let it rest for a couple of minutes.

    Preparing the Beurre Blanc

    In a saucepan, combine 1/2 cup of white wine and 1/4 cup of white wine vinegar. Bring to a boil and reduce by half. Lower the heat and add 1/2 cup of cold butter, whisking continuously until the sauce is emulsified. Season with salt and pepper to taste.

    Plating

    Slice the seared Ahi tuna into thin slices. Arrange on a plate, drizzle the beurre blanc over the top, and garnish with chopped cilantro and a squeeze of lemon juice.
