Meatloaf

Hamakua Mushroom Gravy

Method

Meatloaf

  1. 1

    Prepare the Meatloaf

Preheat your oven to 350°F (175°C). In a large bowl, combine the ground beef, ground pork, chopped onion, minced garlic, bread crumbs, eggs, milk, Worcestershire sauce, salt, and pepper. Mix well until all ingredients are combined.

  2. 2

    Shape and Bake

Transfer the meat mixture to a loaf pan, shaping it into a loaf. Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).

Yukon Mash

  1. 3

    Cook the Potatoes

In a large pot, boil the Yukon Gold potatoes until tender, about 15-20 minutes. Drain and return to the pot.

  2. 4

    Mash and Season

Add butter, heavy cream, salt, and pepper to the potatoes. Mash until smooth and creamy.

Hamakua Mushroom Gravy

  1. 5

    Sauté the Mushrooms

In a skillet, melt butter over medium heat. Add sliced Hamakua mushrooms and cook until browned.

  2. 6

    Make the Gravy

Sprinkle flour over the mushrooms, stirring constantly for 1-2 minutes. Gradually add beef broth, stirring until thickened. Season with salt and pepper.

Onion Rings

  1. 7

    Prepare the Breading

In a bowl, soak onion rings in buttermilk for about 30 minutes. In another bowl, mix flour, cornmeal, salt, and pepper.

  2. 8

    Fry the Onion Rings

Heat oil in a deep fryer or large pot to 375°F (190°C). Dredge onion rings in the flour mixture, then fry until golden brown. Drain on paper towels.
