Prepare the Ahi Tuna
Rub the Cajun seasoning evenly on both sides of the Ahi tuna steaks and let them sit for about 15 minutes.

Make the Sauce
In a small bowl, mix together the soy sauce and Dijon mustard; set aside.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute. Then add bok choi and Chinese peas, cooking until tender, about 3-4 minutes. Remove and set aside.

Cook the Ahi Tuna
In the same skillet, add the remaining tablespoon of olive oil and increase heat to high. Add the seasoned Ahi tuna steaks and sear for about 2-3 minutes on each side, or until a blackened crust forms and the center remains rare.

Serve
On a plate, arrange the sautéed bok choi and Chinese peas. Place the blackened Ahi tuna on top and drizzle with the butter sauce. Serve immediately.
