Prepare the Soba Hijiki Noodles
Cook the soba noodles according to package instructions. In the last minute of cooking, add the hijiki seaweed. Drain and rinse under cold water, then toss with sesame oil and set aside.

Prepare the Soy Mustard
In a small bowl, mix together soy sauce and Dijon mustard until well combined. Set aside for serving.

Blacken the Ahi Tuna
Rub the Ahi tuna steaks with blackening seasoning evenly on both sides. Heat a cast-iron skillet over high heat until very hot. Add a small amount of oil and sear the tuna for about 1-2 minutes on each side, until a dark crust forms. Cook to desired doneness.

Plate the Dish
On a serving plate, place a portion of the soba hijiki noodles. Top with the blackened Ahi tuna steaks and drizzle with the soy mustard sauce. Garnish with chopped green onions.
