    Prepare the Cauliflower Puree

    Chop the cauliflower into florets and steam until tender, about 10-15 minutes. Blend with heavy cream, salt, and pepper until smooth. Set aside.

    Make the Chimichurri

    In a food processor, combine parsley, garlic, red wine vinegar, olive oil, salt, and pepper. Blend until chunky and well mixed. Set aside.

    Prepare the Spicy Soy Mustard

    Mix the soy sauce and Dijon mustard in a small bowl. Add chili flakes to taste.

    Cook the Brussel Sprouts

    Trim and halve the brussel sprouts. Sauté in olive oil over medium heat until crispy, about 8-10 minutes. Season with salt and pepper.

    Blacken the Ahi Tuna

    Rub the cajun spice blend over the ahi steaks. Heat a skillet over high heat and add a drizzle of olive oil. Sear the tuna for 1-2 minutes on each side until blackened and cooked to desired doneness.

    On each plate, spread a generous layer of cauliflower puree, top with the blackened ahi, drizzle with chimichurri and spicy soy mustard, and serve with crispy brussel sprouts on the side.
