Prepare the Pork Belly
Preheat your oven to 450°F (230°C). Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat.

Season the Pork Belly
Rub the pork belly with rock salt, ensuring it gets into the scores. Then, sprinkle the five spice powder and black pepper evenly over the meat.

Roast the Pork Belly
Place the pork belly on a roasting rack in a baking tray, skin side up. Drizzle with olive oil and roast in the preheated oven for 30 minutes.

Crisp the Skin
Lower the oven temperature to 350°F (175°C) and continue roasting for an additional 60-90 minutes, or until the skin is crispy and the meat is tender.

Rest and Serve
Remove the pork belly from the oven and let it rest for 10-15 minutes before slicing. Serve with spicy mustard and a cucumber and radish salad.
