Prepare the Turkey
Preheat your oven to 325°F (165°C). Rub the turkey with olive oil, salt, and black pepper. Stuff the cavity with fresh rosemary and thyme.

Roast the Turkey
Place the turkey in a roasting pan and roast for about 3 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey with its juices every 30 minutes.

Make Yukon Potato Puree
Peel and chop the Yukon gold potatoes. Boil in salted water until tender, about 20 minutes. Drain and mash with butter and heavy cream. Season with salt and pepper to taste.

Prepare Candied Yams
Peel and chop the yams. Place in a baking dish, sprinkle with brown sugar, and bake in the oven for 30 minutes until tender and caramelized.

Make Chorizo Stuffing
Sauté chopped onion and celery in a pan. Add house-made chorizo and cook until browned. Mix with bread cubes and chicken broth, then bake until golden brown.

Prepare the Gravy
After removing the turkey, pour the drippings into a saucepan. Mix cornstarch with water, then stir into the drippings to thicken. Cook until bubbly.

Serve with Fresh Cranberries
Serve the turkey with the sides, and garnish with fresh cranberries.
