Roast the Prime Rib
Place the seasoned prime rib on a roasting rack in a baking pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C). Roast for an additional 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Let it rest for 20 minutes before slicing.

Make the Smoked Jus
In a saucepan, add the beef broth, Worcestershire sauce, and drippings from the roast. Simmer over medium heat for 10-15 minutes until slightly thickened. Adjust seasoning with salt and pepper if needed.

Prepare Potato Gratin
While the prime rib is roasting, peel and thinly slice the potatoes. In a saucepan, heat the heavy cream and butter until melted. Layer the potatoes in a greased baking dish, pouring the cream mixture over each layer. Top with grated Gruyère cheese. Bake in the oven for 45 minutes at 350°F (177°C) until golden and bubbly.
