Make the Filling
In a large bowl, combine the ground pork, shrimp, diced lup cheong, green onions, minced garlic, grated ginger, soy sauce, and sesame oil. Mix well until all ingredients are fully incorporated.

Assemble the Potstickers
Take a wonton wrapper and place a tablespoon of the filling in the center. Moisten the edges with water, fold the wrapper over to create a half-moon shape, and press to seal. Repeat with remaining wrappers and filling.

Cook the Potstickers
Heat vegetable oil in a large skillet over medium heat. Arrange the potstickers in the skillet and cook for about 2-3 minutes until the bottoms are golden brown. Add 1/4 cup of water to the skillet and cover immediately. Cook for an additional 5 minutes until the water has evaporated and the potstickers are cooked through.

Serve
Serve the potstickers hot with garlic aioli and Korean chili vinaigrette on the side.
