    Prepare the Pork Belly

    In a large pot, combine the pork belly, soy sauce, mirin, sugar, and enough water to cover the pork. Bring to a boil, then reduce heat and simmer for 2-3 hours until tender. Let cool in the liquid.

    Glaze the Pork Belly

    Once cooled, remove the pork belly from the pot and slice it into thick pieces. In a pan, add the umeboshi paste and cook on low heat. Add the sliced pork belly and sear until caramelized on both sides.

    Prepare Pickled Namasu

    For the pickled namasu, julienne radish and carrot. In a bowl, mix equal parts rice vinegar and sugar, then add the vegetables and let them marinate for at least 30 minutes.

    Steam Bao Buns

    Steam the bao buns according to package instructions until fluffy and warm.

    Assemble the Bao

    Place a slice of ume-glazed pork belly in each bao bun, top with pickled namasu and cucumber slices. Garnish with fresh cilantro before serving.
