Prepare the Filling
In a large bowl, combine the ground pork, chopped shrimp, diced lup cheong, minced garlic, grated ginger, chopped green onions, soy sauce, and sesame oil. Mix well until all ingredients are evenly combined.

Assemble the Potstickers
Take a wonton wrapper and place a small spoonful of the filling in the center. Wet the edges with water, fold the wrapper in half to create a half-moon shape, and press the edges to seal. Repeat with remaining wrappers and filling.

Cook the Potstickers
Heat a non-stick skillet over medium heat and add a bit of oil. Place the potstickers in the skillet, ensuring they are not touching. Cook for about 3-4 minutes until the bottoms are golden brown.

Steam the Potstickers
Add a splash of water to the skillet (about 1/4 cup), cover immediately, and let steam for about 5-6 minutes until the water has evaporated and the potstickers are cooked through.
