    Prepare the Fettuccine

    Cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Sear the Pork

    In a large pot, heat olive oil over medium-high heat. Add the cubed pork shoulder and sear until browned on all sides, about 6-8 minutes. Remove pork and set aside.

    Sauté Vegetables

    In the same pot, add pearl onions and mushrooms. Sauté until softened, about 5 minutes. Add minced garlic and sauté for another minute.

    Combine Ingredients

    Return the seared pork to the pot. Stir in chicken broth, tomato paste, thyme, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for 1 hour or until pork is tender.

    Finish the Dish

    Once the pork is tender, stir in the cooked fettuccine and cook for an additional 2-3 minutes to heat through. Serve hot, garnished with grated Parmesan cheese.
