    Chop the onion and bell pepper. Mince the garlic. Cut the Portuguese sausage and chorizo into slices. If using a whole lobster, you can cut it into pieces for easier cooking.

    In a large paella pan or heavy-bottomed pot, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and sauté until softened, about 5 minutes.

    Add the Sausages

    Add the sliced Portuguese sausage and chorizo to the pan. Cook for an additional 5-7 minutes until the sausages are browned.

    Stir in the paella rice, paprika, saffron, salt, and pepper. Cook for 2-3 minutes, allowing the rice to absorb the flavors.
