Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Topping

    In a small saucepan, melt 0.25 cups of butter and stir in 0.5 cups of brown sugar until dissolved. Pour this mixture into the bottom of a 9-inch round cake pan. Arrange the pineapple rings on top and place a cherry in the center of each ring.

    Make the Batter

    In a mixing bowl, cream together 0.5 cups of butter and 1 cup of granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in 1 tsp of vanilla extract.

    Combine Dry Ingredients

    In another bowl, whisk together 1.5 cups of flour and 2 tsp of baking powder.

    Combine Mixtures

    Gradually add the dry ingredients to the butter mixture, alternating with 0.5 cups of milk. Mix until just combined.

    Bake the Cake

    Pour the batter over the pineapple layer in the cake pan and bake for 35-40 minutes or until a toothpick comes out clean.

    Cool and Flip

    Allow the cake to cool in the pan for 10 minutes before inverting onto a serving plate.

Foster Sauce

    Prepare the Sauce

    In a saucepan, melt 0.5 cups of butter and 0.5 cups of brown sugar over medium heat. Stir until combined, then add 0.25 cups dark rum, 1 tsp cinnamon, and 1 tsp vanilla extract. Bring to a simmer and cook for 2-3 minutes.

Crème Anglaise

    Heat the Cream

    In a saucepan, combine 1 cup of heavy cream, 0.5 cups of milk, and 0.5 cups of sugar. Heat gently until the sugar dissolves, but do not let it boil.

    Whisk Egg Yolks

    In a separate bowl, whisk together 4 egg yolks. Gradually pour the warm cream mixture into the egg yolks while whisking constantly.

    Thicken the Sauce

    Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon. Scrape the seeds from 1 vanilla bean and stir into the mixture. Strain through a fine-mesh sieve before serving.
