Prepare the Topping
Preheat your oven to 350°F (175°C). In a 9-inch round cake pan, melt the butter in the oven. Once melted, sprinkle the brown sugar evenly over the butter. Arrange the pineapple slices on top of the brown sugar and place a maraschino cherry in the center of each pineapple slice.

Make the Cake Batter
In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. In another bowl, whisk together the milk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and mix until just combined.

Combine and Bake
Pour the cake batter over the pineapple and brown sugar mixture in the pan. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve
Remove the cake from the oven and let it cool for 10 minutes. Then, carefully invert the cake onto a serving plate. Serve warm with Lappert's Vanilla Ice Cream and drizzle with caramel sauce.
