    Prepare the Sweet Potato Puree

    Peel and cut sweet potatoes into cubes. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Add butter and milk to the sweet potatoes. Mash until smooth and creamy. Season with salt to taste. Set aside.

    Prepare the Ahi Tuna

    Crack the black peppercorns using a mortar and pestle or a rolling pin. Mix with kosher salt.

    Pat the Ahi tuna steaks dry with paper towels. Rub the peppercorn-salt mixture over both sides of the steaks.

    Heat olive oil in a skillet over medium-high heat. Sear the tuna steaks for about 1-2 minutes on each side for medium-rare, or until desired doneness.

    Prepare Spicy Inamona

    In a small bowl, mix inamona, chili flakes, lemon juice, and chopped green onions. Stir well to combine.

    To serve, place a scoop of sweet potato puree on the plate, top with the peppercorn crusted Ahi, and spoon the spicy inamona over the top.
