Prepare the Carrots
Peel and slice the Maui heirloom carrots into thin rounds. In a skillet, add 1 tablespoon of olive oil over medium heat. Add the carrots and sauté for about 5-7 minutes until tender. Season with salt and pepper, then set aside.

Cook the Gnocchi
In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float. Drain and set aside.

Prepare the Preserved Lemon Butter
In a small saucepan, melt the butter over low heat. Add the chopped preserved lemon (remove any seeds) and simmer for a couple of minutes to infuse the flavor.

Sear the Opah
Pat the opah fillets dry with paper towels and season with salt and pepper. In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the opah fillets and sear for about 3-4 minutes on each side until golden brown and cooked through.

Combine and Serve
To serve, place a portion of the sautéed carrots on each plate, top with the gnocchi, and place the seared opah on top. Drizzle with preserved lemon butter and garnish with fresh parsley.
