Method

Steak Preparation

    Season the Steak

    Generously season the ribeye steaks with salt and black pepper on both sides.

    Heat the Grill

    Preheat the grill to high heat. Add olive oil to the grill grates to prevent sticking.

    Grill the Steaks

    Place the seasoned steaks on the grill and cook for 4-5 minutes per side for medium-rare, or until desired doneness.

    Add Rosemary

    In the last minute of cooking, add fresh rosemary to the grill for flavor.

    Rest the Steaks

    Remove the steaks from the grill and let them rest for 5 minutes before slicing.

Cognac Peppercorn Demi Glace

    Sauté Shallots

    In a saucepan, sauté chopped shallots in a bit of olive oil until translucent.

    Add Cognac

    Carefully add cognac and let it simmer until reduced by half.

    Add Beef Stock and Peppercorns

    Add beef stock and black peppercorns and simmer until reduced and thickened.

    Finish with Cream

    Stir in the heavy cream and simmer until the sauce coats the back of a spoon.

Truffle Garlic Mashed Potatoes

    Boil Potatoes

    Peel and chop russet potatoes, then boil in salted water until tender.

    Mash the Potatoes

    Drain the potatoes and mash them with butter, heavy cream, truffle oil, and minced garlic.

    Season the mashed potatoes with salt and pepper to taste.

Vegetable Preparation

    Preheat the oven to 400°F (200°C).

    Toss green beans and baby carrots in olive oil, salt, and pepper.
