Preparation and Cooking

    Prepare the Lamb

    Preheat the oven to 400°F (200°C). Season the lamb with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the lamb for 2-3 minutes on each side until browned.

    Roast the Lamb

    Transfer the lamb to a baking dish and roast in the oven for about 20-25 minutes for medium-rare. Use a meat thermometer to check for an internal temperature of 135°F (57°C). Remove from the oven and let it rest for 10 minutes before slicing.

    Make the Ulu Gratin

    In a saucepan, combine the sliced ulu, cream, and half the cheddar cheese. Season with salt and pepper. Cook over medium heat until the mixture is heated through and the cheese is melted. Transfer to a baking dish, top with the remaining cheese, and bake for 20 minutes or until golden and bubbly.

    Cook Seasonal Vegetables

    Steam or sauté the seasonal vegetables until tender but still crisp, about 5-7 minutes. Season with salt and pepper to taste.

    Prepare Truffle Vinaigrette

    In a small bowl, whisk together the truffle oil and white wine vinegar. Adjust the seasoning with salt and pepper.

    Serve

    Slice the lamb and serve it alongside the ulu gratin and seasonal vegetables. Drizzle with truffle vinaigrette before serving.
