Preparation and Cooking

    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Remove the silver skin from the ribs and season with salt and pepper on both sides.

    Make the Mongolian Sauce

    In a saucepan, combine soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes. Bring to a simmer over medium heat until the sugar dissolves. Let it simmer for about 10 minutes to thicken slightly.

    Bake the Ribs

    Place the ribs on a baking sheet lined with foil. Brush a generous amount of the Mongolian sauce over the ribs. Cover the ribs with another piece of foil and bake for 2.5 hours.

    Glaze and Finish

    After 2.5 hours, remove the top foil and brush more sauce on the ribs. Increase the oven temperature to 400°F (200°C) and bake uncovered for an additional 30 minutes, basting with sauce every 10 minutes until caramelized.

    Serve

    Remove the ribs from the oven and let them rest for a few minutes. Slice and serve garnished with chopped green onions and white sesame seeds.
