Marinate the Butterfish
In a bowl, mix the miso paste, mirin, sugar, and soy sauce until well combined. Place the butterfish in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 8 hours, preferably overnight.

Prepare the Sweet Ginger Wasabi Butter
In a small saucepan over low heat, melt the butter. Once melted, stir in the grated ginger and wasabi paste. Cook for an additional 2-3 minutes until fragrant, then set aside.

Cook the Choi Sum
Blanch the choi sum in boiling water for 1-2 minutes until tender but still vibrant green. Drain and set aside.

Plate and Serve
On a serving plate, place a portion of choi sum, top with the misoyaki butterfish, and drizzle with the sweet ginger wasabi butter. Serve immediately.
