Beef Brisket

Method

Cooking Instructions

  1. 1

    Prepare the Brisket

Trim excess fat from the brisket and pat it dry with paper towels.

  2. 2

    Make the Rub

In a bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub this mixture all over the brisket.

  3. 3

    Soak the Wood Chips

Soak the mesquite wood chips in water for at least 30 minutes before smoking.

  4. 4

    Prepare the Smoker

Preheat your smoker to 225°F (107°C). Add the soaked wood chips to the smoker.

  5. 5

    Smoke the Brisket

Place the brisket in the smoker, fat side up. Smoke for about 1 hour per pound, or until the internal temperature reaches 190°F (88°C).

  6. 6

    Wrap and Rest

Once the brisket reaches the desired temperature, wrap it in foil and let it rest for at least 30 minutes before slicing.

  7. 7

    Serve

Slice against the grain and serve with corn on the cob, baked beans, and mochi corn bread.
