Preparation and Assembly

    Make the Choux Pastry

    In a saucepan, combine water, butter, sugar, and salt. Bring to a boil. Add flour all at once and stir until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat and let cool slightly.

    Incorporate Eggs

    Add eggs one at a time, mixing well after each addition until the dough is smooth and shiny.

    Pipe the Dough

    Preheat the oven to 400°F (200°C). Transfer the dough to a piping bag and pipe two rings onto a parchment-lined baking sheet, one on top of the other to create a donut shape.

    Bake the Pastry

    Bake for 25-30 minutes until golden brown and puffed. Do not open the oven door during baking.

    Prepare the Matcha White Chocolate Cream

    Melt white chocolate in a double boiler. In a separate bowl, whip heavy cream until stiff peaks form. Fold in melted white chocolate and matcha powder until well combined.

    Assemble the Paris-Brest

    Once the choux pastry is cool, slice in half horizontally. Fill the bottom half with matcha white chocolate cream, sprinkle with freeze-dried raspberries, and place the top half over it.

    Serve with a scoop of Lappert's matcha ice cream on the side.
