1. Prepare the Duck Breasts

Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and pepper.

2. Sear the Duck Breasts

In a large skillet, heat olive oil over medium-high heat. Place the duck breasts skin-side down in the skillet and sear for 6-8 minutes until the skin is crispy and golden brown. Flip the breasts and cook for an additional 4-5 minutes.

3. Prepare the Maple Glaze

In a small saucepan, combine the maple syrup with a splash of water and bring to a simmer over low heat. Allow to reduce slightly for about 5 minutes.

4. Glaze the Duck Breasts

Brush the maple glaze over the duck breasts during the last 2 minutes of cooking, allowing it to caramelize slightly.

5. Rest and Serve

Remove the duck breasts from the skillet and let them rest for 5 minutes before slicing. Serve with assorted roasted vegetables and carrot puree on the side, drizzled with demi-glace.
