Lamb Preparation

    Prepare the Lamb

    Preheat the oven to 400°F (200°C). Season the rack of lamb with olive oil, salt, and pepper. In a bowl, mix macadamia nuts, Parmesan cheese, and chopped herbs. Press the mixture onto the lamb to form a crust.

    Place the lamb on a baking sheet and roast in the oven for about 25-30 minutes for medium-rare, or until desired doneness. Let it rest before slicing.

Brussel Sprouts Preparation

    Prepare the Brussels Sprouts

    Toss halved Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and sprinkle with Parmesan cheese.

    Roast in the oven for 20-25 minutes until crispy and golden.

Confited Potatoes Preparation

    In a saucepan, melt butter over low heat. Add potatoes, garlic, thyme, and salt. Cook gently, covered, for about 30-40 minutes until tender.

Demi-Glace Preparation

    Prepare the Demi-Glace

    In a saucepan, melt butter and sauté shallots until translucent. Add beef stock and coffee porter beer. Simmer until reduced by half, about 15-20 minutes. Season with salt and pepper.
