Cook the Pasta
In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1-2 minutes until lightly golden. Gradually whisk in the milk and bring to a simmer, stirring constantly until thickened. Remove from heat and stir in the white cheddar cheese and half of the parmesan cheese until melted and smooth. Season with salt and black pepper.

Combine Pasta and Lobster
In a large mixing bowl, combine the cooked macaroni, lobster meat, and cheese sauce. Mix well to coat the pasta evenly.

Prepare the Panko Gremolata
In a small bowl, mix the panko breadcrumbs, chopped parsley, minced garlic, and remaining parmesan cheese. Season with salt and pepper.

Bake the Mac & Cheese
Preheat the oven to 350°F (175°C). Transfer the lobster mac and cheese mixture to a greased baking dish. Sprinkle the panko gremolata evenly over the top. Bake for 25-30 minutes until golden brown and bubbly.

Remove from oven, let cool slightly, and serve hot. Enjoy your Lobster Mac & Cheese!
