Lobster Eggs Benedict

    Prepare the Hollandaise Sauce

    In a saucepan, melt the butter over low heat. In a separate bowl, whisk the egg yolks and lemon juice until thick and pale. Slowly drizzle in the melted butter while whisking continuously. Add cayenne pepper, salt, and pepper to taste. Keep warm.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the water. Poach for 3-4 minutes until whites are set but yolks remain runny.

    Assemble the Benedict

    On toasted English muffin halves, layer the lobster meat and the poached eggs. Drizzle with hollandaise sauce and serve immediately.

    In a small saucepan, combine maple syrup and ground coriander. Heat gently until warm and well combined.

Chicken and Waffles

    In a bowl, combine buttermilk, flour, baking powder, and salt. Dip the chicken breasts into the batter, ensuring they are fully coated.
