Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the water. Poach for 3-4 minutes until whites are set but yolks remain runny.

Assemble the Benedict
On toasted English muffin halves, layer the lobster meat and the poached eggs. Drizzle with hollandaise sauce and serve immediately.
Coriander Maple Syrup

Combine the Syrup
In a small saucepan, combine maple syrup and ground coriander. Heat gently until warm and well combined.
Chicken and Waffles

Prepare the Chicken
In a bowl, combine buttermilk, flour, baking powder, and salt. Dip the chicken breasts into the batter, ensuring they are fully coated.

Heat oil in a frying pan over medium-high heat. Fry the chicken for 5-7 minutes on each side until golden brown and cooked through.
