Pork Ribs

Prepare the Marinade
In a bowl, mix Lilikoi juice, chipotle peppers, brown sugar, soy sauce, minced garlic, black pepper, and salt to create the marinade.

Marinate the Ribs
Place the pork ribs in a large zip-lock bag or baking dish, pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Yuzu Kosho Slaw

Make the Slaw
In a large bowl, combine shredded cabbage, shredded carrots, yuzu kosho, mayonnaise, rice vinegar, sliced green onions, and salt. Mix well until combined.

Roast the Sweet Potatoes
Preheat the oven to 200°C (400°F). Cut the satsuma sweet potatoes in half, drizzle with olive oil, sprinkle with salt and cinnamon. Place them cut-side down on a baking sheet and roast for about 25-30 minutes or until tender.
