    Prepare the Marinade

    In a bowl, combine Ko Chu Jang, honey, soy sauce, rice vinegar, minced garlic, minced ginger, and sesame oil. Mix well to create a glaze.

    Marinate the Ribs

    Place the pork ribs in a large resealable plastic bag or a dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Ribs

    Remove the ribs from the marinade, reserving the marinade. Place the ribs on the grill and cook for about 15-20 minutes, turning occasionally and basting with the reserved marinade until the ribs are caramelized and cooked through.

    Prepare the Shishito Peppers

    While the ribs are grilling, toss shishito peppers with a little olive oil and salt. Grill them for about 5-7 minutes until they are blistered.

    Make the Yuzu Kosho Tartar

    In a small bowl, mix mayonnaise with yuzu kosho to taste. Adjust the amount of yuzu kosho according to your preference for heat.

    Serve

    Once the ribs are cooked and the peppers are blistered, serve the ribs with grilled lemon wedges, shishito peppers, and a side of yuzu kosho tartar.
