Prepare the Miso Marinade
In a bowl, mix the miso paste, mirin, and sesame oil. Coat the salmon fillets with the marinade and let them sit for at least 30 minutes.

Cook the Salmon
Preheat the oven to 375°F (190°C). Place the marinated salmon fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the salmon is cooked through.

Make the Macadamia Sesame Brittle
In a saucepan, combine sugar and 1/4 cup of water over medium heat until sugar dissolves. Add chopped macadamia nuts and sesame seeds, stirring constantly until golden brown. Pour onto a greased baking sheet and let cool before breaking into pieces.

Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit for 10 minutes.

Assemble the Rolls
Place a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving an inch at the top. Place a piece of cooked salmon and some macadamia sesame brittle in the center. Roll tightly using the mat, sealing the edge with a little water.

Serve
Cut the roll into bite-sized pieces and serve with sweet chili sauce for dipping.
