Prepare the Kalua Pork
Preheat your oven to 300°F (150°C). Rub the pork shoulder with liquid smoke, sea salt, black pepper, and place it in a roasting pan. Cover tightly with aluminum foil and roast for 6-8 hours until tender.

Make Crispy Onions
Slice the large onion into thin rings. Soak the rings in buttermilk for 30 minutes. Dredge in all-purpose flour, then fry in hot oil until golden brown. Drain on paper towels.

Prepare the Slaw
Finely shred the cabbage and grate the carrot. In a bowl, mix mayonnaise, rice vinegar, and brown sugar. Combine with cabbage and carrot, mixing well.

Make Sweet & Sour Sauce
In a small saucepan, combine pineapple chunks, brown sugar, soy sauce, and rice vinegar. Simmer on low until slightly thickened, about 10 minutes.

Assemble the Sandwich
Shred the cooked pork and pile it onto slider buns. Top with housemade slaw, crispy onions, and drizzle with the pineapple sweet & sour sauce. Sprinkle with black sesame seeds before serving.
