    Prepare the Ingredients

    Clean and slice all the mushrooms and shishito peppers. Chop the scallions and shiso leaves.

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside on paper towels to drain.

    Sauté the Vegetables

    In the same skillet, add the sliced mushrooms and shishito peppers to the bacon fat. Sauté until they are tender and lightly browned, about 5-7 minutes.

    Cook the Spaghetti

    While the mushrooms are cooking, bring a pot of salted water to a boil and cook the spaghetti according to package directions until al dente. Reserve 1 cup of pasta water, then drain.

    Combine Ingredients

    Add the cooked spaghetti to the skillet with the sautéed mushrooms. Pour in the garlic dashi soy sauce and toss everything together. If it's too dry, add reserved pasta water as needed.

    Finish the Dish

    Crumble the cooked bacon over the pasta, add chopped scallions and shiso leaves, and toss everything gently to combine. Serve immediately.
