Prepare Sushi Rice
Rinse 1 cup of sushi rice until the water runs clear. Cook the rice according to package instructions. Once cooked, mix in 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt. Allow the rice to cool.

Prepare Hamachi
Slice the hamachi into thin strips, about 1/4 inch thick. Set aside.

Assemble the Roll
Lay a nori sheet on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a small border at the top. Place a few slices of hamachi and pickled jalapenos in a line across the rice.

Roll the Sushi
Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

Slice and Serve
Slice the roll into 6-8 pieces using a sharp knife. Serve on a plate, garnished with bubu arare and a small bowl of ponzu sauce for dipping.
