Prepare the Ingredients
Start by slicing the corned beef into thin slices and shredding the sauerkraut if needed.

Assemble the Sandwich
Lay out 4 slices of rye bread. Spread a generous amount of 1000 Island dressing on each slice. Layer the sliced corned beef evenly on top of the dressing, followed by a slice of Swiss cheese and a quarter cup of sauerkraut. Top with another slice of Swiss cheese and finish with another slice of rye bread to close the sandwich.

Grill the Sandwich
In a large skillet, melt 1 tablespoon of butter over medium heat. Place the assembled sandwich in the skillet and grill until the bread is golden brown and the cheese starts to melt, about 4-5 minutes. Carefully flip the sandwich and add another tablespoon of butter to the skillet. Grill the other side until golden brown and the cheese is fully melted, about another 4-5 minutes.

Serve
Remove the sandwich from the skillet and let it cool for a minute before slicing in half. Serve warm with extra 1000 Island dressing on the side for dipping.
