In a large bowl, combine the chicken pieces and buttermilk. Make sure the chicken is fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

In another bowl, mix together the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper until well combined.

Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge each piece in the seasoned flour mixture, ensuring all sides are well-coated. Shake off any excess flour.

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the coated chicken pieces to the hot oil, working in batches if necessary to avoid overcrowding. Fry for about 15-18 minutes, turning occasionally, until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (75°C).
