Hibachi Grilled Organic King Salmon

Preparation

    Prepare the Marinade

    In a bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, salt, and black pepper. Coat the salmon fillets with the marinade and let them sit for at least 30 minutes.

    Grill the Salmon

    Preheat the grill to medium-high heat. Grill the marinated salmon for about 4-5 minutes per side or until cooked to your desired doneness. Garnish with chopped green onions before serving.

    Prepare the Salad

    Soak the dried wakame in water for about 10 minutes, then drain and chop. Combine the sliced cucumbers and wakame in a bowl. In a separate bowl, mix rice vinegar, sesame oil, sugar, and salt. Pour the dressing over the salad and sprinkle with toasted sesame seeds.

    Make the Ponzu

    In a small bowl, combine soy sauce, citrus juice, mirin, rice vinegar, chopped green onions, and optional dashi stock. Stir well and let it sit for 10 minutes for the flavors to meld.
