    Prepare the Rice

    Start by cooking the steamed rice according to package instructions. Once cooked, set aside and keep warm.

    Grill the Salmon

    Preheat the hibachi grill to medium-high heat. Season the Atlantic salmon fillets with salt and pepper. Place the salmon on the grill skin-side down and cook for 4-5 minutes. Flip and cook for an additional 3-4 minutes or until the salmon is cooked through and flakes easily.

    Prepare the Bok Choy

    While the salmon is grilling, steam the bok choy in a separate pot for about 3-4 minutes until tender but still vibrant green. Remove from heat and set aside.

    Assemble the Namasu

    In a bowl, mix the namasu (pickled vegetable salad) and set aside for garnish.

    Serve

    On each plate, serve a portion of steamed rice, place the grilled salmon on top, add steamed bok choy on the side, and drizzle with ponzu sauce. Garnish with namasu.
