    Prepare the Sweet Potatoes

    Peel and chop the sweet potatoes into 1-inch cubes. Boil them in salted water for about 15 minutes or until tender. Drain and set aside.

    Prepare the Market Vegetables

    Wash and chop the market vegetables into bite-sized pieces. Sauté them in 1 tablespoon of olive oil over medium heat for about 5-7 minutes until they are tender but still crisp. Season with salt and pepper.

    Prepare the Fish

    In a bowl, mix the remaining olive oil with chopped fresh herbs, the juice of half the lemon, salt, and pepper. Coat the fish fillets with this mixture.

    Sear the Fish

    Heat a non-stick skillet over medium-high heat. Sear the fish fillets for about 4-5 minutes on each side, or until cooked through and golden brown.

    Plate the seared fish alongside the sautéed market vegetables and sweet potatoes. Drizzle with the remaining lemon juice and garnish with additional fresh herbs if desired.
