    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Pat the chicken halves dry with paper towels and place them in a roasting pan.

    Season the Chicken

    In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Rub this mixture all over the chicken halves, ensuring they are well coated.

    Roast the Chicken

    Place the roasting pan in the preheated oven. Roast the chicken for about 45-55 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and golden brown. Baste with pan juices halfway through if desired.

    Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve with mashed potatoes, local vegetables, and mushroom pan gravy.
