Method

Turkey and Stuffing

    Prepare the Turkey

    Preheat the oven to 325°F (165°C). Rinse the turkey, pat dry, and season with salt and pepper. Place in a roasting pan.

    Make the Stuffing

    In a large skillet, melt butter over medium heat. Sauté onions, celery, and garlic until soft. Add kalua dark meat, pastele sausage, diced ulu, thyme, sage, salt, and pepper. Stir in chicken broth until moist.

    Stuff the Turkey

    Fill the turkey cavity with the stuffing mixture and tie the legs together. Cover the turkey with aluminum foil.

    Roast the Turkey

    Roast the turkey for about 3 hours or until the internal temperature reaches 165°F (75°C). Remove foil during the last 30 minutes for browning.

Green Bean Almandine

    Prepare the Green Beans

    Blanch the green beans in boiling water for 3 minutes, then drain and set aside.

    Sauté Almonds

    In a skillet, melt butter over medium heat. Add sliced almonds and toast until golden.

    Combine and Serve

    Add the blanched green beans and lemon juice to the skillet, toss to coat, and serve warm.

Gingered Vanilla Cranberry Sauce

    Cook the Cranberries

    In a saucepan, combine cranberries, sugar, and water. Bring to a boil, then reduce heat and simmer for 10 minutes until cranberries burst.

    Add Flavorings

    Stir in grated ginger and vanilla extract. Let cool before serving.

Giblet Gravy

    Prepare Giblets

    Chop turkey giblets and sauté in a skillet until browned.

    Make the Gravy

    Sprinkle flour over giblets, stir to combine, and gradually add chicken broth. Cook until thickened and season with salt and pepper.
