Prepare the Onions
Slice the Maui onion into thin rings. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and cook until they become soft and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.
Cook the Bacon
In another skillet, cook the smoked bacon slices over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels.
Shape the Burger Patty
While the bacon is cooking, shape the ground beef into a patty, about 3/4 inch thick. Season both sides with salt and black pepper.
Cook the Burger Patty
In the same skillet used for the bacon (with some rendered fat), cook the burger patty over medium-high heat for about 4-5 minutes on each side for medium doneness. In the last minute of cooking, place the cheddar cheese on top of the patty to melt.
Toast the Brioche Bun
While the burger is cooking, toast the brioche bun halves in a toaster or on a skillet until golden brown.
Assemble the Burger
On the bottom half of the toasted brioche bun, layer the lettuce, then the tomato slice, followed by the burger patty with melted cheese, the crispy bacon, and finally the caramelized onions. Top with the other half of the bun.
Serve
Serve the burger with a side of French fries.
