Method

Cooking the Lamb

    Marinate the Lamb

    In a bowl, combine olive oil, garlic powder, salt, black pepper, and rosemary. Add the lamb chops and coat well. Marinate for at least 30 minutes.

    Grill the Lamb

    Preheat the grill to medium-high heat. Grill the lamb chops for 4-5 minutes on each side for medium rare, or until desired doneness. Remove from grill and let rest.

Preparing the Demi-Glace

    Make the Demi-Glace

    In a saucepan, combine cognac and black peppercorns. Bring to a simmer until reduced by half. Add beef stock and simmer until thickened. Stir in heavy cream and simmer for 5 minutes.

Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes. Boil in salted water until tender. Drain and return to pot.

    Mash the Potatoes

    Add butter, heavy cream, truffle oil, minced garlic, and salt to the potatoes. Mash until smooth and creamy.

Vegetable Preparation

    Roast Baby Carrots

    Preheat oven to 400°F (200°C). Toss baby carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.

    Sauté Green Beans

    In a skillet, heat olive oil over medium heat. Add green beans, salt, and pepper, and sauté for 5-7 minutes until tender.
