Preparation and Cooking

    Marinate the Lamb

    In a small bowl, mix together olive oil, salt, black pepper, minced garlic, and chopped rosemary. Rub the mixture all over the half rack of lamb. Let it marinate for at least 30 minutes at room temperature.

    Prepare the Mashed Potatoes

    In a large pot, bring water to a boil and add the chopped potatoes. Cook until tender, about 15-20 minutes. Drain and return to the pot. Add milk, butter, curry powder, and diced onion. Mash until smooth and well combined. Season with salt to taste.

    Roast the Tomatoes

    Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 15-20 minutes until they are blistered and soft.

    Grill the Lamb

    Preheat the grill to medium-high heat. Place the marinated half rack of lamb on the grill and cook for about 5-7 minutes per side for medium-rare, or until it reaches your desired doneness. Remove from the grill and let it rest for 5 minutes.

    Slice the lamb into individual chops. Serve on a plate with a generous scoop of curried onion mashed potatoes, roasted tomatoes, and drizzle the natural lamb juices over the top.
