Step 2: Cool the Milk
Remove the saucepan from the heat and let the milk cool to about 110°F (43°C). You can check the temperature with a kitchen thermometer.

In a small bowl, mix the plain yogurt with a few tablespoons of the cooled milk to thin it out. Then, whisk this mixture back into the cooled milk.

Cover the saucepan with a lid or a clean towel and place it in a warm environment (like an oven with the light on or a yogurt maker) for 6 to 12 hours, depending on the desired tanginess.

After incubation, line a bowl with cheesecloth or a fine mesh strainer and pour the yogurt into it. Let it strain for 2 to 4 hours in the refrigerator, depending on how thick you want the yogurt to be.
