Souffle
Method
Souffle
- 1
Prepare the Raspberry Mixture
In a blender, combine fresh raspberries, 1 tablespoon of sugar, and Grand Marnier. Blend until smooth. Strain the mixture through a fine sieve to remove seeds, if desired.
- 2
Whip the Cream
In a mixing bowl, whip the heavy cream with vanilla extract and 1 tablespoon of sugar until soft peaks form. Set aside.
- 3
Beat the Egg Whites
In a separate bowl, whisk the egg whites with a pinch of salt until stiff peaks form. Gradually add the remaining tablespoon of sugar while whisking.
- 4
Combine Mixtures
Gently fold the raspberry mixture into the whipped cream. Then, carefully fold in the beaten egg whites until just combined.
- 5
Freeze the Souffle
Transfer the mixture into serving dishes or a large bowl. Cover with plastic wrap and freeze for at least 4 hours or until set.
