    Prep the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This will remove excess starch and help them crisp up.

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Dry and Season

    After soaking, drain the potatoes and pat them dry with a clean towel. In a large bowl, toss the potatoes with olive oil, salt, pepper, and fresh thyme leaves.

    Bake the Fries

    Spread the potatoes evenly on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until crispy and golden brown.

    Add Truffle Oil and Parmesan

    Once the fries are done baking, remove them from the oven and drizzle with truffle oil. Sprinkle grated Parmesan cheese over the top and toss gently to combine.

    Serve the truffle Parmesan fries immediately, garnished with additional thyme leaves if desired.
