Prepare the Fish
Season the Dover sole fillets with salt and black pepper on both sides.

Breading Process
Set up a breading station with three shallow dishes: one with flour, one with the beaten egg, and one with panko breadcrumbs. Dredge each fillet in flour, dip in egg, and coat with panko breadcrumbs.

Fry the Fish
In a frying pan, heat vegetable oil over medium heat. Once hot, carefully add the breaded fish fillets and fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Sauce
In a small bowl, mix together yuzu kosho and mayonnaise until well combined.

Assemble the Sandwich
Spread the yuzu kosho mayonnaise on one side of each slice of bread. Place a lettuce leaf on one slice, followed by the fried fish fillet. Top with the other slice of bread, mayonnaise side down. Slice in half and serve.
