Cooking Instructions

  1. 1

    Prepare the Base

In a large pot or deep skillet, heat olive oil over medium heat. Add the Portuguese sausage and spicy chorizo, cooking until browned, about 5 minutes.

  2. 2

    Add Aromatics

Stir in the minced garlic and diced tomatoes. Cook for an additional 2-3 minutes until the tomatoes soften.

  3. 3

    Add Rice and Broth

Add the Arborio rice and stir to coat. Pour in the chicken broth, paprika, salt, and black pepper. Bring to a simmer.

  4. 4

    Add Seafood

Once simmering, add the shrimp and clams. Cover and cook for about 10-12 minutes until the rice is tender and the clams have opened.

  5. 5

    Finish with Butter

Stir in the butter until melted and combined. Adjust seasoning if necessary.

  6. 6

    Garnish and Serve

Remove from heat, garnish with fresh parsley, and serve hot.
